Yannick La Salle, the executive chef at the Supreme Court of Canada, has advanced to the 2027 Canadian Culinary Championship after winning the Ottawa-Gatineau Regional Culinary Qualifier on Monday night.
La Salle’s winning dish featured a Quebec venison loin complemented by a foraged juniper berry reduction and sunchoke purée, paired with an Okanagan Valley Pinot Noir. His victory marks a significant achievement as he prepares to represent the National Capital Region at the championship event scheduled for February 2027 in Ottawa.
Previously, La Salle claimed the national title in 2019 while leading the kitchen at Les Fougères in Chelsea, Quebec. He joined the Supreme Court culinary program in 2023, bringing his expertise to the official state dinners served at the court.
